Avocado and seitan toast

Enjoy this Delicious avocado and Seitan toast, very simple and delicious. Takes you just few minutes to make it. Seitan is very high in protein and it has a very nice taste, it is used as a meat replacement. So this can be a very nice breakfast to start your with.

INGREDIENTS

1 avocado
4 slices of whole wheat bread
200g of seitan
1/2 a tsp of paprika
1/2 a tsp of coriander powder
1 tablespoon of olive oil
1/4 tsp of salt
PREPARATION

Cut seitan into slices
Season with paprika, coriander and salt.
Brush the pan with oil, place the seitan slices on pan evenly and bake for 20 to 25 minutes.

Meanwhile toast the bread.
While you wait, mash the avocado and season it with salt and coriander powder.

Remove seitan from oven.
Spread bread with avocado then top each bread with a slice of seitan and enjoy.
